Sometimes referred to as “raw sugar,” Turbinado sugar is golden-brown in color and consists of large crystals. However, although it’s less processed than its fully refined white counterpart, this type of sugar isn’t exactly raw. After all, raw sugar is unfit for human consumption — it needs to be cleaned of contaminants and processed to some degree for it to be safe. Although other types of sugar can be manufactured from sugar cane or sugar beets, Turbinado sugar is made exclusively from sugar cane.
How Turbinado Sugar is Made
Turbinado sugar is made by placing the pressed juice of sugar cane in boiling water until it crystallizes. The crystals are then placed into a turbine – which is how this form of sugar gets its name — and spun until the excess moisture is gone. The golden brown color that’s left on the crystals is the result of residual molasses left on the surface. The molasses also provides the sugar with a slightly caramelized flavor.

Turbinado sugar isn’t typically used in the same manner that traditional white or brown sugar is used. Because of its crystallized form that makes it less dissolvable, it doesn’t work well for inclusion in recipes in place of more finely grained white or brown sugar. Keep in mind, however, that because it won’t melt into the other ingredients during the baking process, it can be successfully used in recipes where internal crunch and pops of sweet caramel goodness are desirable. This brings a whole new dimension to simple dessert items such as chocolate chip cookies, brownies, shortbread. It can even be mixed in with pie crust.
Where this type of sugar really shines is as a finishing agent that adds a glistening layer of crunch and flavor from everything to humble bran muffins to an elegant Earl Grey cake fit for a grand finale to a white tie dinner.
Turbinado sugar made its first appearance on the national culinary scene in little packets next to the white sugar and sugar substitutes in coffee shops. It was soon discovered that sprinkling this sugar on baked goods brought a whole new level of texture and taste to the picture.
