Jams and sauces are all about texture, so finding the right size of grain sugar is paramount. Jams cook very slowly, so larger grained sugars can dissolve evenly over time where smaller grained sugars will dissolve too quickly, leading to burning or rough, sticky textures.
Like we mentioned above, larger grained sugars work best for jam production, while fine grain and powdered sugars are best avoided. Sugars like Con AA sugar, Unigran sugar, or Industrial Coarse Grain Sugar work best, depending on your production level. Coarse granulated sugars are the preferred option for making jams and sauces since the larger surface area of the crystals leaves less room for impurities. Using coarse sugar will yield the clearest and purest results.
As an alternative to regular granulated sugar, you may also use brown sugar or raw sugar to make jams. Brown sugar is pretty equivalent to the sweetness level of granulated sugar, so you won't have to change the ratio. Just expect a slight molasses taste to the final product, as well as a slightly firmer texture. These sugars without their molasses stripped actually lend themselves to create jam gel easier than other sugars.
