Commonly known as confectioners sugar or icing sugar, powdered sugar is a finely-ground, granulated sugar that is milled into a powder according to desired specifications. Indiana Sugars offers 6x, 10x or 12x granulation. To prevent caking and ensure a smooth flow, a small amount of corn starch (3%-5%) is always added to our powdered sugar. Industrial food production regularly utilizes bulk powdered sugar for quick-dissolving applications.

There are several common applications of bulk sugar within a manufacturing settings. Some include:
You will be reaching for powdered sugar, or baker's special sugar, very often in any bakery. Powdered sugar is used most often to create smooth frostings and icings, or as a finishing touch sifted on top of other baked goods.
The ultra fine texture of powdered sugar helps blend into liquids easily, making it a great option for any type of beverage. The fermentation process requires sugar to create a chemical reaction. Powdered sugar can be used just as easily as other types of sugar in this process.
Candies with soft centers or powdery exteriors benefit from using powdered sugar. Candy makers can experiment with textures by using powdered sugars instead of regular granulated sugars.
Powdered sugar is referred to as confectioners sugar for a reason. Recipes often call for powdered sugar when your end result needs to be as smooth as possible. Melted chocolates require this above all else.
Sugar is needed in abundance when making sodas, juices, ales, and more. Because of that, bulk powdered sugar is usually found at any beverage company. Beverage manufacturers can save time by using powdered sugar to quickly dissolve into their canned beverages.
Most medications contain some amount of sugar to improve the taste and experience of consuming oral medications. Liquid medicines in particular may find powdered sugars useful to add.

More than other types of sugar, it's essential you keep powdered sugar dry. Powdered sugar also retains smells easier, so avoid placing it in the fridge, coolers, or next to other potent products.
When in doubt, keep your sugars with other dry ingredients in a cool, dry location with little humidity. Powdered sugar's texture is more sensitive to moisture, so keeping your sugar in an airtight container will ensure your sugar's quality for years to come.
Both these types of sugar have very similar makeup since they are both primarily sucrose, but they come from very different sources. For the most part, you won't be able to notice a difference in taste between the two. In fact many store-brand sugars don't even tell you what type of sugar it is! Cane sugar is said to caramelize easier, and gives you a more uniform taste with a slight fruity note. Some say beet sugar has a slight earthiness to it because of its root vegetable origin. Ultimately, the taste difference is mostly indiscernible when used in desserts.
Most sugar in the United States is refined, and lots of major sugar companies use bone char from animal bones to refine sugar as a whitening agent. However, there are ways to refine sugar organically which do not use animal bones. Look for organic powdered sugars or powdered sugars branded as vegan. You can always use vegan alternative sugar types, such as beet sugar, date sugar or coconut sugar.
